Citrus-cilantro Crab Salad With Avocado

Move over, chicken and tuna. It’s crab salad’s turn.

This recipe combines all of your favorite guacamole flavors with crab meat for a hearty crab salad that’s great on its own, spread on crackers, between two slices of bread or eaten on a bed of greens. Simply combine one cup of lump crab meat with one mashed avocado, then add the juice of one lime, a teaspoon minced garlic, a tablespoon of chopped cilantro and salt to taste. 

This recipe can also be easily adapted to include your favorites. Craving a pop of color? Add in chopped tomatoes. Want a little extra spice? Add in chopped jalapenos. The possibilities for customization are endless.

Crab Toast With Lemon Aioli

Avocado toast has had plenty of time in the spotlight. We think crab toast should be the next big thing — and a creamy lemon aioli is the perfect way to anchor your crab meat onto a delicious slice of toasty bread.

While you can certainly buy lemon aioli at the store, it’s also quite easy to make at home. Simply whisk together one large egg yolk with one clove of garlic, one teaspoon lemon zest, at least two tablespoons of fresh lemon juice and one teaspoon of Dijon mustard. Once all these core ingredients are combined, slowly drizzle in one cup of vegetable oil, whisking as you go. Add salt to taste and you’ll be ready to build your toast. 

Start with a base of crusty, fresh bread that is lightly toasted. Smear a thin layer of lemon aioli and top with crab meat seasoned with vegetable oil, fennel and more lemon.

Crab Spring Rolls

Deceptively easy to make and impressive to serve, spring rolls are a fresh, nutritious appetizer with unlimited combinations. All you need is rice paper wrappers and your chosen ingredients. If you need inspiration, try this: thinly slice a carrot and cucumber into matchsticks, then layer with crab meat, avocado, cilantro and a squeeze of lime. Then gently roll your wraps up like a burrito and seal with a little bit of water. Then, voila! 

As pretty as these look on their own, don’t forget to go the extra mile and prepare a dipping sauce to go with them. We’d recommend a honey sriracha or spicy peanut.
